Title: Shrimp Victoria

1lbPeeled & deveined shrimp
1/2cFinely chopped onion
1/4cMargarine or butter
1cSliced fresh mushrooms OR
1cnSliced fresh mushrooms
1tbFlour
1/4tsSalt
1dsCayenne pepper
1 1/2cHot cooked rice

Saute shrimp and onion in margarine for 5 minutes or until shrimp are tender. Add mushrooms and cook for 2 to 3 minutes more. Sprinkle in flour, salt and pepper. Stir in sour cream and cook gently for 10 minutes, being careful not to boil mixture. Serve over rice.
